A single-variety Grillo, born among the salt flats of the Stagnone, where the sea enters the vineyards through wind and salt. White blossom, grapefruit, orange blossom — a bouquet that speaks of western Sicily without needing to announce itself. On the palate it is balanced, savoury, mineral, with a persistence that invites you back. Pairing it with a fish couscous or a sea bream in a salt crust is almost an obligation. But it is just as good simply as it is, with the light going down. La Maggiore — Pétillant, Marsala Some people save bubbles for celebrations. We drink them in summer, before dinner, with crudités and good company.
