LA Maggiore: Pétillant Naturel

The ancestral method can rightly be considered the founding father of all known sparkling wine techniques — a millennia-old process tracing back to the ancient Romans, when spontaneous fermentation in amphorae naturally produced effervescent wines. This method preserves the naturalness of winemaking and elegantly highlights the authentic varietal characteristics of the grape, showcasing the timeless simplicity of traditional oenology.

Despite its ancient origins, this method has gained renewed popularity among curious wine lovers, thanks to its ability to produce wines that are playful, immediate, and delightfully easy to drink. In France, wines made using this technique are called “Pétillant Naturel” — commonly abbreviated as Pét-Nat or simply pétillant — poetically translated as “naturally sparkling,” perfectly capturing the philosophy behind this approach.

As a fully natural product, La Maggiore represents the most authentic and unfiltered expression of the Marsala terroir. While AV01 — our Catarratto orange wine — tells the story of Alcamo’s rolling hills, La Maggiore speaks of the vast flat plains of the Lilibetan coastline, a completely different terroir that unveils new expressive potential and offers a fresh perspective on Sicily.

This maritime landscape, bathed in saline winds and resting on sandy soils, reveals the extraordinary potential of its native grape varieties, with Grillo emerging as the absolute protagonist. Vinified using the ancestral method, this exceptional cultivar produces a wine that is a pure expression of its terroir, beautifully showcasing its natural and vibrant acidity.

Guided by scientific curiosity and oenological passion, we approached this ambitious project seeking to understand and enhance every expressive facet of this fascinating grape. La Maggiore is produced through a single alcoholic fermentation in two stages: it begins in stainless steel tanks and is completed in the bottle while not all natural grape sugars have yet been converted by the yeasts — a careful process that gives the wine its lively, natural sparkle.

The journey of La Maggiore begins with an early and meticulously planned harvest: the grapes are hand-picked at the end of August, with utmost respect for their integrity, and placed in small 15-kilogram crates to ensure the berries remain pristine during transport to the winery.

Upon arrival, the grapes undergo gentle pressing, aimed at extracting only the purest and highest-quality must. The first stage of fermentation occurs in stainless steel tanks at a carefully controlled temperature of 18°C, preserving the grape’s freshness and aromatic elegance.

After eight days, the most delicate and decisive step begins: temperature control is used to gradually slow and halt fermentation. At this precise moment, the wine is bottled before fermentation is complete, allowing the yeasts to finish converting sugars directly in the bottle. The carbon dioxide produced during this final stage becomes trapped, giving La Maggiore its natural effervescence.

As the yeasts complete their life cycle in the bottle, a fine sediment forms naturally at the bottom. Far from being a flaw, this sediment enhances the wine’s aromatic and gustatory complexity, adding subtle notes of fresh bread crust and delicate hints of yeast that enrich the sensory profile.

Every bottle of La Maggiore thus captures the pure expression of its terroir, combining natural sparkle, freshness, and aromatic depth in perfect harmony — a tribute to both tradition and the attentive craft of modern winemaking.

La Maggiore is a wine meant to be enjoyed immediately, not one for long aging. It is fun, versatile, and approachable, with a moderate alcohol content and an elegant yet light-bodied structure. Its charm lies in its ability to surprise and tell the story of an ancient land, conveying, sip by sip, a winemaking tradition that honors the past while embracing the future.

This pétillant naturel is the perfect companion for a wide range of culinary creations: light and fresh dishes, seafood-based first courses, raw seafood, delicate white meats, and the refined flavors of Mediterranean cuisine. Crisp, playful, and distinctive, La Maggiore stands out for its personality, leaving a lasting impression while remaining effortlessly enjoyable.

The label

The label of LaMaggiore is both artistic and deeply faithful to its place of origin—a true window onto the landscape that gave life to this extraordinary wine. The vast flat plains of the Marsala coastline are depicted through a geometric representation of the iconic salt pans, those shimmering mirrors of water that have defined this unique corner of Sicily for centuries.

These elements of the landscape are transformed into luminous, sparkling rectangles, enhanced with gold foils that capture and reflect light, echoing the crystalline waters of the salt pans under the Mediterranean sun. The label is a tribute to a territory that, over centuries, has successfully combined salt extraction with viticulture, creating a landscape truly unique in the world. The salt pans, with their perfect geometry and shifting reflections, become a metaphor for the artisanal precision and natural beauty inherent in the production of LaMaggiore.

The name “LaMaggiore” was chosen after careful reflection on the history and identity of the Rallo winery, representing the natural evolution of a well-established tradition. The renowned Bianco Maggiore has long been the winery’s flagship and most commercially successful wine, earning the trust of generations and becoming a symbol of Rallo’s enological excellence.

This success inspired the creation of a “Junior” version in 375 cl, designed to meet the needs of a market increasingly attentive to mindful consumption and portion control, further expanding the Maggiore family.

Yet, one essential element was still missing: the female presence. From this awareness arose the idea of “LA” Maggiore, where the feminine article is not just a linguistic choice but a founding act, ideally completing the winery’s genealogical lineage.
