The Islands on the Horizon

Approaching Marsala from the Stagnone, the coastline unfolds gently, passing the spectacular salt pans. Vineyards stretch to the horizon, separated from the shimmering water by only a few swaying reeds. Piles of salt, the tiles that cover them, and historic windmills punctuate the landscape. Beyond, the islands appear—the Stagnone islands and the more distant Egadi, with Favignana taking pride of place.

This is the terroir of our Grillo grapes, used for Bianco Maggiore. Here, the sea plays a dominant role, shaping the grapes’ ripening and enriching the wine’s aromatic bouquet.

Bianco Maggiore is a remarkable Marsala-adjacent wine, produced with meticulous vineyard practices and advanced winemaking techniques at Azienda Agricola Rallo, a winery committed to environmental respect and organic viticulture. Rallo seeks to convey the territory with honesty and simplicity, expressing authenticity in every bottle. The label mirrors this philosophy: light lines, delicate gold foils representing the salt flats, a white heron, and a windmill, all rendered in black on a white background. White like the Stagnone salt pans. White like the wine, ready to be poured. Essential. Unadorned. Present.

Grillo is the youngest of Sicily’s native white grape varieties, a contemporary expression of Sicilian viticulture. Molecular DNA studies show it is a cross between Catarratto Bianco and Zibibbo, created in 1874 in Favara (AG) by Baron Antonio Mendola. His aim was to enhance Marsala with a richer aromatic profile. Rich in polyphenols and terpenic compounds, Grillo proved perfect not only for alcohol levels but also for aging potential.

Deeply rooted in Sicilian soils, Grillo is versatile, elegant, and aromatic. Once primarily used for structured, long-lived wines like Marsala, it now shines in refined, easy-drinking table wines, offering a contemporary expression of Sicily’s white grape heritage.

At Rallo, Grillo is vinified in pure form. The grapes are hand-harvested into 15 kg crates and carefully transported to the winery, where every step of the process is conducted under reductive conditions. From the destemmer-crusher to bottling, nitrogen protects the fruit from oxygen, ensuring that the wine—and each grape variety—retains a distinctive identity that reflects its terroir.

Working in reduction enhances the aromatic profile, giving Grillo a unique and expressive character. Only selected, organic-certified yeasts are employed, preserving the purity of the fruit. The result is a wine of remarkable organoleptic depth: savory, aromatic, and endowed with excellent aging potential.

A Wine of Fine Structure

With a light, luminous straw-yellow color, this wine exudes fruity and citrus aromas, delicately intertwined with floral notes of wildflowers and orange blossom. On the palate, it is fresh and well-structured, offering a pleasantly savory and mineral finish with engaging persistence.
